2020 Pet-Nat Sparkling Barbera

Unlike the traditional method of Sparkling wine production, where there are 2 separate fermentations that create the bubbles, the ancestral method (Petillant Naturel) captures bubbles at the end of its primary fermentation.
With a little bit of sugar still remaining we bottle the wine and close it with a bottle cap. The small amount of sugar continues to ferment until it is nearly dry, adding a wonderful mousse of fine bubbles to the finished wine.
